Abstract:Objective To detect the food-borne pathogens in breakfast sold by snack bars and street mobile stalls in Chongqing City so as to investigate the hygienic status of takeaway breakfast and find the existing food safety problems. Methods According to the principle of random sampling, 1,051 unpacked and non-heated takeaway breakfast samples were collected from snack bars and street mobile stalls (including licensed mobile breakfast foodcarts and unlicensed ones) in 16 districts and counties of Chongqing City during 2013-2015. Salmonella, Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes and diarrhoeagenic Escherichia coli were detected based on the National Standard GB4789-2010, GB4789.14-2014 and GB/T4789-2003. Results Ten strains of pathogenic bacteria were detected in 300 samples collected in 2013, including 9 strains of Staphylococcus aureus and 1 strain of Escherichia coli, but no Salmonella was detected. The detection rate of Staphylococcus aureus in the samples collected from the fast food restaurants or dining rooms was 3.00%. The detection rate of Staphylococcus aureus in porridge and rice flour products was 4.21%, and that of diarrhoeagenic Escherichia coli in Chinese style salad was 2.94%. 62 strains of pathogenic bacteria were detected in 751 samples collected in 2015, including 24 strains of Staphylococcus aureus, 1 strain of Salmonella and 37 strains of Bacillus cereus. No Listeria monocytogenes was detected. The detection rate of pathogenic bacteria in supermarket retail samples was the highest (15.38%), and the dominant contaminated bacteria were Staphylococcus aureus and Bacillus cereus. No Listeria monocytogenes was detected in porridge and rice flour products, but the total detection rate of Salmonella, Staphylococcus aureus and Bacillus cereus was 8.32%. Conclusions There exists the contamination of food-borne pathogenic bacteria in takeaway breakfast in Chongqing City, and the main food-borne pathogens in porridge and rice flour products are Staphylococcus aureus and Bacillus cereus. The corresponding countermeasures should be taken to prevent the occurrence of food poisoning.
