Research progress on detection methods of heavy metals in food

Abstract:Heavy metals are metals with a density greater than 5.0 g/cm3. Although low concentrations of heavy metal ions do not immediately cause health hazards, they can accumulate in organisms. Due to the influence of human activities and geological conditions, heavy metals can be enriched in soil, atmosphere and water in different forms and then get into the human body through the food chain, which can harm to human health. Therefore, it is very important to understand the research progress on current status of heavy metal pollution in food and their detection methods. In this paper, the pollution situation and detection methods of heavy metals in food are reviewed. The principle, advantages, disadvantages and research progress of main detection methods are expounded, and the future development trend of heavy metal detection technology in food are prospected.
